Jhatpat McCain Hot & Tangy Potatoes



I had used a packet of McCain Masala Fries. Each large packet contains 2 sachets of ‘masala mix’ to sprinkle over the fries. While I love spicy food, mum cannot tolerate extreme levels of spice hence I’d used just half a sachet. Although we went easy on the masala, it was very evident that the spice mix was yum! I decided to save the remaining spice mix in the freezer, to cook with. Lo & behold that day arrived. I was in a big-lazy-assed mode and decided to quickly (jhatpat) make a potato sabzi. Voila! The McCain spice mix came to my rescue. *happy puppy dance*


Ingredients:

3 medium-large potatoes, diced small
1 teaspoon cumin seeds
1½ teaspoon coriander seeds
A few curry leaves, washed
2 teaspoons McCain Masala Mix
Salt, to taste
Oil, as required or desired


Method:

1.    Heat oil in a wok. Add the coriander seeds, cumin seeds and when they begin to splutter, add curry leaves.



2.    Lower the flame, add the masala mix and sauté for a few seconds.
3.    Add the diced potatoes and give it good mix to ensure the masala mix evenly coats all the potatoes.
4.    Cover the wok and continue cooking on low heat for 10 minutes.
5.    At this point check for seasoning and add as desired.
6.    Open the lid and give the potatoes a gentle toss. Cover the lid and continue cooking for 10 more minutes or until potatoes are cooked.
7.    This step is optional: When the potatoes are completely cooked, remove the lid and continue cooking the potatoes on low heat to crisp up about 20% of the potatoes. When served, those crisp, chewy potato bites are going feel like heaven on your palate.
8.    Serve with dal as a side or by itself as a batata sabzi.


Chef Notes:

1.    Any spice mix, from any brand (manufacturing Masala Fries), will work for this recipe.
2.    Please feel free to adjust the amount of masala mix. I merely added 2 teaspoons as I wanted medium spicy potatoes.
3.    The reason we do not add salt right at the beginning is coz the masala mix has a bit of salt. We allow the salt from the masala mix to mingle with the potatoes and add extra only if needed.
